Spaghetti Squash Bowls-darn good

I made a chicken alfredo one last night.

By using light alfredo sauce and chicken breasts it was a very filling lower cal meal.

spaghetti squash is something that sounds horrible, but in reality its pretty good when smothered in a sauce

We do a Spaghetti Squash Burrito Bowl. Pretty damn good.

Cut the squash in half. Remove seeds and coat the inside with olive oil. Takes about 1 TBS
Sprinkle with salt
Bake in the over. I did it at 350

While that is baking I cut the chicken into small bites and pan cooked with onion and garlic.

Steam a bit of broccoli and put in the alfredo.

When the chicken is cooked add it to the alfredo sauce.

When the squash is done, take it out and fill the bowl of the squash with the alfredo mixture.

Cover it with fresh parm cheese.

Put it back in the oven and bake again until the cheese is melted and the mixture is bubbling a bit.

Serve.

That sounds great.

I would think you can do it with just about any sauce. I will likely try a Thai variation next.

My wife bought one of those contraptions where you can run squash through it and cut into different shapes.

For an easy and healthy meal we'll mix in ground chicken and mushrooms with a marinara sauce. Cut the squash into ribbons and saute it a couple minutes. It releases a lot of water so I drain it. Now you have low calorie meat spaghetti. Toss some parm on top if you like.

Been eating spaghetti squash to replace most of my pasta and cauliflower to replace most of my potatoes and have lost 8 pounds this month. Great thing is that I don't notice much of a difference at all.

My favorite way to eat Spag Squash is with Chicken and Rotels. I'll take pictures next time I make it.
