I will eat whatever and eat it gladly. All of my friends and girlfriends' moms loved me growing up because I'll eat the hell out of anything, even the bland Midwestern shite my mother-in-law throws down.
I also love traditional downhome Southern cooking, being raised on it.
All that being said, I absolutely appreciate what Redzepi is doing at Noma, and I'd love the chance to eat there. I was arguing this on another board and made this point:
Assuming 3 meals a day and a life expectancy of 70 years of age, a human will eat somewhere around 75,000 meals in his/her life. Why can't some of those be really strange and outside the box? I occasionally want food that challenges and surprises me and makes me rethink the whole concept of food. People like Redzepi do that for us. By all accounts, he does stuff like burn an onion, and you look at it and think, "Huh. Burned onion. Looks digusting." Then you eat it and are completely surprised by the deliciousness due to his treatment of the ingredient. That's pretty cool.
