Driving through Port Barre, I stopped at Bourque's to try the smoked sausage and ham hocks for red beans I was making.
I've tried several of the best local smoked meat butcher shops and Bourque's had the best flavor for red beans that I've tried. It was the best red beans and rice I've ever had.

Bourques is good yes
But for Red beans ....try Meche's meat market in Opelousas. on 190 west bound
Very heavy smoked, I use it for hardly anything but red beans and occasionally a gumbo.

If you can find it, Creole Country has a good smoked sausage with green onion. Made on David St. in N.O. There Hogs head is great.
