I put in zip loc bag and flattened a little with my hand rubbed olive oil and cavenders greek seasoning. Pan seared on hot skillet a minute or two on each side. Damn its good! Sweet potato fries and spinach salad.

I've heard the best tasting turkey is one taken out of season.

Not sure about this, but I know I've never enjoyed wood ducks more than in early August. Grandpa always said the creek gets too crowded once the season opens. He'd come back with 8 or so and put me under the pecan tree with a milk crate to sit on while he critiqued how I picked them. If you expected him to pluck his own ducks you were sadly mistaken. Life lessons or some such bull. I figure he probably earned that privilege given he had been a logger for about 40 years at that point. I won't forget the first time he took me down there out of season. Not something I do now, but it was a special experience.

My old man told me back in the day they'd kill young ones in August/September. Said they were wonderfully delicious.

I cut up a fresh breast off a turkey I killed Sunday and fried it. Kids said "this is better than Canes."
