scrambled eggs and rice mixed together

Did anyone eat this as a kid?
my grandma use to make it for us once in awhile

didn't know if it was a southern thing

Mix some mustard in and sprinkle your favorite hot sauce on it .. Pretty damn good ..

I almost did this a few nights ago with some leftover rice. Do you add the rice first and then add the eggs so the rice is a bit buttery or do you stir it in with the eggs after they start to get curds?

Oh yes. My mom would soft boil eggs, chop them and mix with rice and butter, salt, and pepper. She said they used to have it for breakfast when she was a girl in good ole Pointe Coupee Parish. Still a good comfort food every now and then.

I actually beat the eggs like im just making scrambled eggs,
When they are still a bit runny in the skillet I add the cooked rice.
sometimes I'll even add shredded cheese and a bit of salt and pepper to taste

I'll have to try it. I was thinking I'd melt the butter, put the rice in it to get some buttery goodness on it and then added the eggs.

Yeah, but fried rice is usually a bit drier (good though)
I feel like egg rice almost has a casserole quality to it

Growing up in the River Parishes, we had rice with every meal. Naturally, there was always some left over rice after lunch (we called it dinner) so we often had what we called rice and eggs for the evening meal we called supper.

Mom would also cook what she called smothered potatoes. She would sweat onions and garlic in butter. Add thinly sliced red potatoes to the pot on high heat. She would let them almost scorch and brown in the pot, stir the potatoes often and then add chopped green onions the last few minutes.

This was so good. Anyone have this?

No, but I'm going to now.

I still call refer to the middle meal at dinner and the night meal as supper quite often. When eating at home, that's what they are to me.

My mom made it for us all the time. She put lots of butter in it as well.

Occasionally, she still makes it for my little brother when he comes home. That along with his favorite yellow cake with chocolate icing.

And kindly post the pics here. Took me a while to unlearn the dinner/supper, lunch/dinner thing when I was in exile up north.

My fiancé is 100% Cajun and from Delcambre, LA. Her family was rice farmers decades ago. They introduced this to me as it a very common meal for them. However they used fried eggs over easy over the rice and a side of boudin. Damn fine meal there.

I'm not sure anything fills you up. You have a talent for eating a lot at one time. I wish I had your apparent metabolism.

Ruz, I don't think I'd ever heard supper referred to as dinner until I went to LSU. I was confused.
