Salmon Burgers ... anybody got a good recipe?

1lb. ground filleted salmon
1 raw egg
1/2 cup shredded onion
1/4 cup Panko bread crumbs
1 tsp Old Bay
1/2 tsp cayenne
salt and pepper to taste.

Mix it all, patty it up and the Wife freezes before cooking.

That sounds good. I might tweak that a little bit (Wife hates Old Bay) ... but this definitely a solid foundation.

You used raw, yellow onions?

She uses the white ones. She shreds them though so they are very fine slivers that disintegrate when cooked. Perfect flavor without the texture of the onion. Yeah throw whatever seasonings you like in it. We've made them with curry powder. It was a little overpowering but still damn good.

Some wasabi mayo with a little bit of creole mustard mixed in goes great with salmon burgers FWIW

eta I suppose technically it could be a remoulade
