Saki sushi in Alexandria closed down by health dept

Damn, that sucks. It was one of the better sushi places here, if not the best (here). Would have thought the owners would be better than that from the few conversations I've had with them

I think the same family owns the one in Shreveport off of Youree Drive.

the owners said it was because of the way they were freezing their salmon, which was legal in other states, just not in LA

although shutting them down seems like it would be a greater offense or multiple offenses

If that's the reason then that really sucks. Doesn't seem like that big of a deal, but it may hurt business. Just the fact the health felt shut someone down will scare off people

I had no idea about it being illegal in some states. My Japanese mentors taught me that salmon is one fish that should be frozen for 48 hours before serving raw.

They used escolar for a fact as a cheap alternative. I'm not surprised at all.

There are a lot of dirty arse restaurants out there run by some folks who don't appear to be the type to stay late to make sure the codes are met.

Yet we almost never hear of one getting shut down. That makes me think this was a major or repeated screwup.

I like the one in Shreveport. I hope they "freeze the salmon" properly there.

Could be that in order to properly make salmon, and other fish for that matter, safe to eat you have to freeze it to a temp of at least -4F for an extended period of time. Obviously things will freeze at 32F and most home freezers won't ever get to -4F.

No way are they shutting down an entire restaurant just because they aren't freezing ONE type of fish properly. They are lying or not telling the whole truth.

They must have pissed somebody off, 3 inspections within 17 days back in March LINK

You get a chance to fix your critical violations. If they are shut down then they deserve it. Health inspections are public record so you should be able to pull it up on the LDH site. I wish Louisiana would do like Las Vegas and post health inspections in the newspaper. You'll find that it is overwhelmingly asian restaurants that have a high number of criticals.

If you have ever had orange diarrhea you have eaten escolar. And these are some of the names it goes by.

Lol at "the way they froze salmon" was not keeping it frozen

Those people had dirty arse tables, chemicals stored above product, "frozen" product not actually frozen, food stored on the floor, etc. There's probably less things they did right than wrong.

That sucks. I knew the owmer's son. They lived on the second floor of that restaurant. Not sure if they still do but it was built to be both a house and restaurant
