I've never had separation unless it is a very dark roux, and I never thought is was burned. I'm talking as dark as dark chocolate or even a little darker than that. Not black. When I try to mix with stock it is like old motor oil. It pisses me off when that happens. If I stop at milk chocolate I haven't had problems.
