Roasted cabbage steaks with corned beef and Swiss cheese (photos)

Here is another Keto friendly recipe. A year or two back, several of us posted photos of roasted cabbage steaks that were very tasty and easy to do. Tonight I pushed that dish a step farther by adding thin sliced corned beef and Swiss cheese to my oven roasted cabbage steaks.

Here is what I did for two servings.

Ingredients:
- Cabbage
- Olive oil, salt and black pepper
- 1/2 pound - Thin sliced corned beef
- 6 slices of Swiss Cheese



I cut my cabbage into 2 somewhat thin steaks - maybe 3/8 inch thick, oiled both sides lightly with olive oil, placed them on an oiled baking pan and seasoned the steaks with salt and pepper.



I sprinkled each slice lightly with water and roasted the cabbage slices for 30 minutes at 300 degrees F



While the cabbage cooked, I portioned my corned beef slices and pulled the swiss cheese.



Each pre-cooked cabbage steak was topped with corned beef



and Swiss cheese





The cabbage steaks went back into the oven for 30 minutes at 300 degrees F, to heat the corned beef and melt the cheese.





I like cabbage and corned beef, so this was a pretty good keto meal.

Well that certainly is a different take on corned beef and cabbage and looks like something I'll try the next time I make corned beef.

Looks good. We never really had corned beef growing up. I've eaten it on occasion mainly in sandwich form, but it's pretty good. I've no idea how to make it. Do you typically buy it pre-made or make at home? Hard to do? Seems like more or less what you made there would do well between some rye (almost a reuben but without gratuitous dressing). Maybe just a simple vinaigrette. I guess that's not keto but I'm on a see food diet so no bother to me. (not really true, I've got young children so I have to round down to their palate and eating abilities)

They make keto friendly thousand island dressing that would probably go well with it.

You can cook/roast corned beef from a marinated (Corned) portion sold in the meat section. I usually just buy sliced from the deli case.

A Ruben would have sauerkraut where I used cabbage, toasted rye, swiss cheese and Russian dressing. Definitely not keto.

Kroger deli case. Sliced as thin as she was willing to slice.

Such a simple idea, yet I’ve never thought to do this. Might have to get some pastrami for this over the weekend.

I made cabbage steaks for the first time a week or so ago- they turned out really delicious. I never thought about topping them like this- good call, MD.

Thank you MD. I love corned beef and cabbage. This is much simpler that cooling a whole corned beef and braiding cabbage. Will eat.

I’ve always preferred a nice mustard on my Reubens. Don’t get me wrong- I will eat one with dressing, but love the spiciness of the mustard.
