ramen cacio e pepe

Made this tonight
Apparently some David Chang creation
I cut the recipe in half because I didn't feel like wasting that much good cheese on an experiment such as this.
My thoughts...tasted pretty good. Would probably be better with a more traditional Italian pasta but I figured I'd give it a whirl.

It's pretty good but I had to use a cup of grated cheese for one serving. Which isn't really a lot of money but I think I could find better uses for it.

Good cacio e pepe made right at some hole in the wall in Rome is one of my favorite dishes. How does it compare to the real thing?

Honestly I've never made the real thing. I just ordered a ton of ramen noodles to play with so I can't really speak for it.
It was surprisingly good but not very filling.

yeah i tried his ramen gnocchi parisienne one day and it turned out to be a massive failiure.
really not sure what happened, but the wife laughed her arse off at my attempt.

I've always wondered just how much better this dish could be.
It's noodles (homemade would make a difference I guess), extra virgin olive oil, pepper, and pecorino. Source your ingredients well and it should really easy to recreate.

went to 'cacio e pepe' in rome back in may and thought it was pretty dang good, considering its simplicity.

Was in Italy in June. The dinner I had at this little town just outside of Rome was the best meal I had in Italy for the week I was there. And yes, it was cacio e pepe. My mouth's watering now.
That "cacio e pepe" from above looks pretty comared to the two times i had it. But I'm sure it's still delicious.

There's the rub. It's rare to impossible to find a restaurant that cooks homemade noodles made to order as well as they do in Rome. And I don't have the skills to do it myself at home. Not to mention the bootleg quality of much EVOO and pecorino cheese you find in American supermarkets compared to in Italy. Could get expensive and time-consuming right quick to make a truly authentic version that an rival the $8 Euro plates I've had in Rome.

Its a good dish and easily replicable at home. Christ, my kid eats it just about every other day. Noodles, butter, pepper, and parm. Id be lying if I said, i didnt often make a little too much, add more pepper, and eat the leftovers.
Been on a big Italian kick lately, meaning just been trying to cook as simply as possible with the best results.

Yeah
I thought about making it with some legit parmigiano reggiano I ordered from Italy but I didn't because I'd hate to waste it on some ramen noodle concoction and also wanted to stay true to the dish.
