Get an electric or gas grill for outside.

They sandwich tray idea is gold. I love honkey sandwiches.

Hummus, pita, and feta cheese, w a tomato/romaine salad on the side
A nice cheese plate w/some cured meats, olives, and melon
Egg salad, tuna salad, three bean salad
Olive oil packed tuna mixed w/white beans & fresh herbs
Chef's salad, heavy on the smoked ham or turkey

If your oven has a decent broiler, it can be quicker/cooler to broil something rather than bake it. Fish, shrimp, boneless/skinless thighs, even hot dogs...

Am I the only person who doesn't like grilling in summer? It's too damn hot to stand over a grill...plus, if I have to go in & out 87 times to tend the grill, any AC saved by not cooking indoors leaked out after my multiple trips. And broiled weenies are just as good as grilled weenies, IMHO.
