The below showed up in my facebook feed. I guess Tory may have ignored it the first time and the guy decided to try to get his attention on his facebook page. The powder doesn't sound good to me and I'd be surprised if a fine dining establishment used it.
The guy's facebook name is Hamish MacFergus Fergusson.

Dear Chef Tory,
We and 10 or 12 of us family members are upstairs in a meeting room for our annual Lundi Gras celebration. I think this is our 9th or 10th year. When my wife and I were married some 52 years ago, and our first apartment was around the corner on Sixth Street. We spent many an hour at the old kitchen bar after work with martinis and a cheese snack. Yes, we go back a while.
You will find here about 20 packets of Ready Mary Mix, made to my formula, specifications and blended for The Fergusson Company of New Orleans. Please give at least eight packets..enough for 2 gallons..to the Bar Staff and experiment with the others. The mix is quite versatile. The viscosity depends on the ratio of hot water and powder. More powder, less water, thicker product. For instance, put a few tablespoons of the powder in a bowl and add just enough hot water to make a thick paste. Add more water and make a Ketchup type sauce, more water and a tomato sauce, more water and a tomato cocktail. It makes a good remoulade with a few additions and a good marinara with some additions.

The powder sounds like it's just dehydrated tomato paste or ketchup. Then there's the variables of whether the mix will dissolve completely and what ratio is needed for mixing something like a bloody mary. Personally, I've never found any powdered mix that will completely dissolve without leaving lumps or particles, unless the liquid's heated--and in this case, if you're mixing a drink with hot liquid, you'll have to cool it before serving it over ice. Just seems like an all-around pain to use when you can just shake up a bottle of Zing Zang and pour.

Nothing like an attempted public shaming ("I have heard nothing from you...", and mentioning your large group dinner) of a person you're trying to squeeze an expert opinion out of, for free. Tacky. You want a chefs opinion and feedback on your product, HIRE one. Don't act as though free samples of a product entitle you to his feedback. It's like asking a dr at a dinner party to look at your suspicious mole, or the attorney in the checkout line about your sons custody case.

Plenty of high and medium profile chefs do product development work. Stahp already with expecting others to help for free. "Let me pick your brain" is one of my least fave phrases from a businessman....sorry, that harvest is gonna cost you.

reminds me of a trip I took with my pop and brother to the lafayette outdoor expo a few years ago...

Older guy with a thick Labadieville cajun accent comes up to us looking all sad and Pop called him out and said "man what happened to your dog?" He kind of perked up and said, "Mais, I'm here in the heart of acadiana trying to sell a bunch of coon arses Gumbo from a bag"

Yes, that was pretty bad, though it made Fergie look bad rather than Tory. I chuckled when I read that Fergie was "moving forward" like Tory would be losing something and then, in the same breath, he'd really like an opinion. The whole thing was bad.
