Post your favorite beef stew recipe.

Cool weather has me craving a good beef stew. It has been at least ten years since I cooked a stew so I am looking for some ideas. TIA

I did a simple one today for three of us and it turned out good. I winged it without a recipe but here is how I did it. I bought a 2-1/2 lb chuck roast and cut it into bite size cubes. Got the dutch oven pretty hot and put a couple of tablespoons of oil in there to keep the meat from sticking. I seared the meat and removed it from the pot. I threw in 2 medium sized onions that were diced up. After about 3 minutes I added 2 T of flour and stirred it in. Then I threw in 3-4 garlic cloves that I had already minced and cooked for another 2-3 minutes. Then I added 12 oz of beer and 2 cups of beef stock and 1/2 cup or so of water. I let that come to a boil and added about 2 T of tomato paste and 2 T of Worcestershire and stirred that in. I added salt, pepper, cayenne and thyme then reduced the heat to low, put the meat back in, put the top back on and cooked it slowly on the stove for about 2 hours and occasionally stirred it to keep from sticking. When the meat was fork tender and the sauce was cooked down I served it over rice. It was cheap, easy and good.

That's a good recipe you posted on your link. When I'm not in a huge hurry that's pretty much how I do mine. You had some nice twist at the end of your recipe that I'll try on the next roast I cook.

I consider myself to be a pretty good cook. I made this a few weeks ago and would say it was one of the top things I've ever made. Very simple as well. I served it with a hot baguette. Make sure you use a good quality chuck roast. Better ingredients make better meals.

Ingredients
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups water
3 tablespoons quick-cooking tapioca
2 teaspoons sugar
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 pounds beef stew meat, cut into 1-inch cubes
4 medium carrots, cut into 1-inch chunks
3 medium potatoes, peeled and quartered
2 celery ribs, cut into 3/4-inch chunks
1 medium onion, cut into chunks
1 slice bread, cubed
Add McCormick Beef Stew Seasoning
Directions
1. In a large bowl, combine the tomatoes, water, tapioca, sugar, salt and pepper. Stir in the remaining ingredients.
2. Pour into a greased 13-in. x 9-in. or 3-qt. baking dish. Cover and bake at 375° for 1-3/4 to 2 hours or until meat and vegetables are tender. Serve in bowls. Yield: 6-8 servings.
