Pork Belly - where to find it in Covington?

I live in Madisonville, and I have yet to find a good meat place. Anyone know of a decent butcher anywhere in the nearby areas? I'd like to cure/smoke bacon, but I have not seen pork belly anywhere. Also I like to find some chicken carcasses from a place that de-bones their own chickens in order to make stock.

I live in Madisonville as well, surprisingly there aren't really any butcher shops around the area.

Good luck finding chicken carcasses. Most places use them to make their own stock.

But, YouTube Jacque Pepin deboneing chickens and do a couple yourself. That's what I've been doing. It's a great way and not hard. Very little knife work. Then stuff chicken yourself and roast carcass then make stock. Two carcass will give you a good gallon of stock.

I will check out the places listed. I've looked in the past at some of them and didn't see it, but I will double check again in case of my extremely nominal failure. Thanks for the advice

When I lived in BR I would get them from Maxwell's. I would have to catch them at the right time, but they were good about selling them. I've considered deboning myself, but I have admittedly been a bit intimidated by the process. I am not very good with my trimming skills, but I may go ahead and start trying this.

is there a whole food in Covington? I just got pork belly from the one in BR. Of course it's pretty hit or miss.

Unfortunately no. The closest one is in Metairie. We have a Fresh Market, but that place blows in comparison. If I can't find any out here, I may just saddle up the horse and head south.

Isn't there a Bergeron's in the Covington/Mandeville area? If so, they make deboned stuffed chickens. Don't think they'd have the pork belly, though.

i will say this. the pork belly i get from whole foods is about $2Lb more than the mexican meat market. But, it's trimmed so you're not paying for the waste and it just looks a lot better.

I would try Saia's or Acquistapace's.

Try Acquistapace's last. That way if they dont have what you're looking for, you can just stroll into the liquor section and have your choice of pretty much anything you could want to drink, and then drink you're sorrows away.

It's called Boudreaux's now. On Hwy 22 right by West Approach. Yes on the chicken; pretty sure no on the pork belly
