Pickled pork has vinegar in it. Salt pork does not.
I prefer pickled pork because it give a nice acid flavor to the beans.
I thought pickled pork and salt pork for red beans was a New Orleans thing. Am I wrong about that?

I prefer pickled pork but it is so GD slimy its hard to cut up for me. I use it
sometimes but smoked chops are much easier to cut up.
