people that don't share recipes... why?

what's the deal with that?
whenever i cook something and someone wants the recipe i gladly hand it over. secret ingrediants, whatever.
this is also in the same vein as " i won't give you the recipe so you have to figure itout and it makes you a better cook". why not give the recipe and let them make it like you make it then chamge itup if they feel the need?

I try to share recipes if I have them, but things that I've created from experimentation don't always have written instructions.
Relatives were after me for years to share my Thanksgiving seafood stuffing recipe, so one year I tried writing down the amounts of seasonings and other ingredients as I added them. Now I just get, "But mine doesn't taste like yours!" I can't help it that I don't measure stuff--I usually just eyeball it and then season to my tastes.

for restaurants who are known for signature items, i agree not to give out the recipe
for home cooks, share the wealth!
my grandma makes awesome homemade sweet and spicy pickles. better than anything in the store. she doesn't sell them, but she won't give me the goddamn recipe!!!!

Most cooks do not measure, they can tell you whats in it but not how much.
I know people who leave out key items from recipes on purpose

I don't mind at all giving out my recipes...but yeah...sometimes it is hard since I don't really measure.
The only thing that I HATE is when I give someone a recipe and they change the hell out of it...and then still tell someone it's my recipe.
My favorite dessert to cook is white chocolate bread pudding. I love it...my hubby loves it...my family loves it.
Then a good friend of ours asked for the recipe...and instead of using day old french bread, she uses Krispy Kreme donuts. Hey...to each their own. I couldn't care less that she changed it up to suit her own taste.
But then when we have had get togethers and she has made it, she tells everyone it's my recipe...and it clearly is not.
It makes me regret that I gave her the recipe.
Even if everyone liked hers better..which who knows if they do and who cares...I still don't want it said that something is my recipe when it's not.

it took years for me to get my grandmothers pasta fagioli recipe, but ive finally got it. mines good but not as good as hers. also my aunt still hasnt given me her canoli recipe.

Unless they're making money on the recipe somewhere... this is about as selfish as it gets.
Although, like said, it can be hard to give an exact recipe out, because people eyeball things. I know I hardly ever measure spices and such. I'd still be happy to tell someone the spices I used if asked.

if I don't share it is because I think your cooking skills are lacking and you would not be able to come close to duplicating what I have made and you would just be wasting food to try it

She's a bitch and you should tell her so.
I'm published so I don't care but I normally just generalize. Some things people want I just tell them to bring me the stuff and I'll make it and give it to them. Tartar Sauce, Horseradish sauce, chicken wings, red and white beans are some items my neighbors just bring to me to make for them.

I share recipes readily. However, most people want a written copy. I don't write down any of them. They're all in my head. I don't even know the measurements. I just know it when I'm cooking. I find the writing to be a chore.
It's odd because I'm notorious for writing everything down. I keep texts of all kinds of stuff. But not cooking.

The reason I take the time to write a recipe down is for consistancy and to be able to give it out...In the olden days(yes I was there)recipes were handed down from generation to generation...mother to daughter...these were charished and stayed in the family...but the family unit is not what it was and this practice has fallen by the wayside...hell, I had 2 wives and a GF and none could cook....anything I cook can be shared...just ask...I even have some recipes in cookbooks I have donated...just more important to me to share anything good I come up with.

I never understood this. If someone ever ate something I cooked and asked me for the recipe, I would be flattered.

like I said....mothers would swear daughters not to give out the family recipes...they are for your daughter or your son's wife...they have been in the family for years....It's just a recipe....and from time to time I update mine or try new things with old recipes....always write it down though....Now for professional chefs..I understand if that's how you make your living...that would be like giving away your money.
