Older eggs work better because the membrane has separated from the shell.

Put eggs in cool water to cover, bring to rolling boil, turn off heat, cover and let sit 15 minutes, run under cold water a few minutes, crack sufficiently peel under running water. Peels every time and the yolks are solid yellow. No green ring and not tough.

Drain off hot water. For a single egg drop it into a glass about an inch deep with cold water. Put hand on top of glass and shake up and down vigorously. The egg shell will crack as it hits the sides of the glass and then will begin to separate and come away from the egg. Within maybe 15 or 20 seconds the shell will come off and the egg will be peeled.

Also works with four or six eggs in the boiler, with the inch of water just like in the glass and the boiler lid used in place of your hand.

You will quickly understand the amount of shaking required and at that point, you will become an expert.

peel off top and bottom of egg. Put mouth on one side and blow, egg pops out of other side
