My son lived off mac and cheese, fish sticks, chicken nuggets, pizza and corndogs for years

He's now 16 and will eat anything. He eats stuff that I'm just like gross wtf

But my point is I wouldn't stress too much. Give her vitamins and just feed her as long as she's not overweight

Also at 1 he ate those awesome Gerber graduates

I have a 14 month old, but she isn't a picky eater. She had homemade beef stew last night. Scrambled eggs; bacon; bean, beef, and cheese burritos; rice & gravy; grilled chicken; chicken, rice, & broccoli casserole; red beans & rice; potato salad are all things she eats regularly. Normally my wife or I feed her dinner, then give her a bath, then we sit down to eat and she always comes begging for some of our food. Like I said, not picky. I'm making chili tonight so we'll see if she likes that too.

The one main issue we have is Ms. Independent Bear WILL NOT allow you to feed her. Fork, spoon, by hand, doesn't matter she will give you baby mean face and turn her head.

She wants to feed herself and hasn't fully mastered utensils yet. So things she can pick up by herself are a plus.

Chef Boyardee rice with chicken and vegetables was our default for a while but luckily our 1 year old has started to eat just about anything we put in front of her.

Mine was like that too. Then he turned 2 and it has been hell since. He hardly wants to eat at all and when he does, it is the same shite all the time. Definitely the most frustrating thing we have experienced with the "terrible twos"

I have triplets (B,G,G). None of them like the same things. The boy is easy, because he'll eat anything, but he is allergic to seafood. One of the girls hates chicken, and the other hates beef. That kind of throws everything off.

They are teenagers, now, so we just make what we make and anyone who doesn't like it can have PB&J and mac and cheese.

We have the same issues and try not to keep her diet pretty extensive so she doesn't get picky. Here are some things we do pretty regularly:

(1) Berries (strawberries quartered are the favorite, but blueberries, blackberries also great)
(2) Thicker greek yogurt (fage is pretty good) and can mix in some apple sauce or mashed up fruit for flavor if necessary
(3) Avocado or the little packets of guacamole
(4) Frozen or fresh green beans, broccolli florets, peas, edamame, sliced carrots are great finger foods
(5) Steak, chicken, lamb, or liver cooked in advance and cut into bites, then frozen serve with frozen sweet potatoes
(6) BelGioioso Mozarella cheese balls comes in small packages with 3 cheese balls are good for the go
(7) hummus (as you mentioned) comes in indvidual packages
(8) sweet potato and/or squash made in advance mashed up some and frozen in ice cube trays
(9) Bananas are perfect snack
(10) Scrambled eggs
(11) Nuts or nut butters - almonds, peanuts, cashews
(12) black beans (will get messy)
(13) creamed spinach or kale frozen in cubes
(14) soups
(15) fruits are easy - peaches, kiwi, melon, oranges

We try to feed ours dinner with us, but many times she gets hungry before we do. In those cases we pick from above which nothing takes more than a couple minutes to have ready for her. Then we save some of our leftovers for the baby for the next day.
