Parents of the F&D. Kid meals

I feel like we always fall back to Mac and cheese with our 1 year old. I hate the feeling of just giving her what's easy and what we know she likes. We've been trying to broaden her meals but I'm looking for some ideas.

I know this is sort of a duh kind of thing but a few ideas can't hurt.

We attempt to do veggies, grilled cheese, mac and cheese, spaghetti, fruits,the usual. Someone recommended hummus today so I'll give that a shot.

Wife and I are in the same boat. Mac n cheese or cereal bars. We try our best to make sure she gets something decent, no fast food stuff. Our daughter seems to like rice so we can usually mix peas or carrots with rice and some seasoning,

Instant mashed potatoes.

Gumbo? I loved gumbo as a kid (minus any spice). Same with red beans and rice.

Great suggestions. She does love gumbo, but it's hard to whip up some of that by myself while the wife is at work

Half potato half cauliflower "mashed potatoes "
Oven fried sliced squash, zucchini (floured and baked)
Puréed carrots in gravys, chili, etc
Quesadillas with sautéed veggies hidden inside



My kids hate vegetables and these trick the little frickers

My 5 and 2 year olds favorite foods are jambalaya, gumbo, anything with crawfish, spaghetti, and red beans and rice (with cornbread--it's a must)

I had several suggestions and then realized they were probably more appropriate for a two year old. So maybe hold onto these ideas for a little while:

Small or half of a baked potato as a meal? Toppings can vary, like cheesy broccoli (small bits of broccoli to introduce). Baked sweet potato.

Use a mini muffin tin for small versions of things. Do mini quiche (crustless) with eggs and ham or other combos. If you're making meatloaf, bake some in the muffin tin for later meals for the toddler. Actually, if you Google toddler meals, a bunch of muffin tin recipes show up.

Diced chunks of avocado are a nice addition to a meal.

My 2 year old eats whatever we eat unless its a soup or salad.

On those nights I'll roast some veggies. She loves roasted broccoli and her orange French fries (roasted carrots).

Roasted sweet potatoes are also a winner.

PB, banana, and honey sandwiches are a favorite as well.

Baked Chicken Nuggets

Make these but don't cook them, put them on a half sheet pan and freeze them, then bag them.

They are pretty darn healthy, and easy to make.

Make sure you make plenty, cause you'll eat them too


ETA: Omit the butter if you want to.

Well first she is only 1 so don't think she will get too adventurous and 2 just remember its a work in progress and as they get older it will evolve and normally into better more nutritious food. That said try all of the above with the exception of chokeable hot dogs. And if she's over one she can now eat honey.

Now mine at 2 could and would eat boiled crawfish like a man and still does today. If I buy 20 lbs from Tony's that's her meal and small snack an hour later and not a claw left undone. But she won't eat a baked potato or red sauce to save her arse. Figure that one out.

Oh and she's a Raman queen.

We need to get back on the roasted veggie train. She loved them pureed before not sure why we haven't given it another shot.

And at 50 a staple in my wife's diet. She eats those like she is going to the electric chair. And I just can't stand them.

Mix peas and carrots with r&g. Carrots make eyes sparkle and peas make super hearing.

Tomato basil soup with grilled cheese is a decent meal

Cheesy cauliflower soup is easy to work with too

My problem is not what my 2 year old son won't it, but rather when he wants dinner. I don't get off work until 5 and he wants dinner for like 530. So unless we have leftovers he is eating thrown together stuff. Wish he could wait a little while then he would have plenty of prepared meals. We aren't good at freezing stuff yet. Really need to get on that
