I remember there was a recipe here for a side that was a hollow onion that he put bullion in and butter and cooked. Does anyone remember the process and amounts? I tried to search but could not find anything. Thanks.

I posted something similar involving a rice dish with boullion and onion baked with rice. Could this be what you are referring to?

Take peel off and hollow out just a little bit of onion and open it up a bit, wrap in foil and put two tablespoons of butter, little Tony's, and an optional bouillion cube, wrap in foil and bake/grill at 350ish for 30 minutes.

This is pretty much it and you can bake rather than grill it.
