Looking for variations on the old fashioned. I do mine by muddling the orange and cherry then adding bitters, bourbon, soda water and sugar the garnish with another cherry and orange slice.

What are some others?

Try a Luxardo cherry in the muddle with the orange, baw. Makes a yuge difference over maraschino. And no soda water.

I absolutely can't stand soda water in an old fashioned. Apparently this is a new trend. I've been to two different restaurants that would be considered higher end fine dining recently that made theirs with soda water. Cut the soda.

Muddle a sugar cube, bitters, and a tiny bit of water until the sugar cube is mostly disolved. Add in and muddle a quarters-size worth of orange peel. Add ice, bourbon, maraschino cherry (with a little bit of the juice) and orange slice as garnish.

Cut the muddled fruit and soda water for starters.

Social uses brown sugar simple syrup and it gives it a little bit of a different flavor.. You can try that.

Luxardo cherries are good but not worth the $$ to me.

Try using a rye whiskey instead of bourbon. It'll change up the flavor to a more spiced cocktail.

I was at a wedding recently and the bartender used Triple Sec instead of sugar/water/soda water/simple syrup. Pretty good, I bought a bottle of Triple Sec and made a few at home like this.

My go to:

Sazerac Rye
Simple Syrup
Regan's Orange Bitters
Angostura Bitters
Luxardo Cherry (with a little juice)
Orange Peel squeezed for a little zest

No muddle. Whiskey drink. Not fruit cocktail.

Keep the soda water. Just a splash. It thins the sugar from the sugar, cherry and orange and the carbonation brightens the flavor of the cherry and orange.

Whiskey
Whatever bitters you like (preferably orange and Angostura)
Simple sugar or granulated (muddled)
Maraschino cherry
Orange slice
Couple cubes of ice

No muddling the fruit

I too find rye preferable to bourbon. I find it a better balance to the sweetness of the other components.

Use orange bitters instead of Angostura.

H. Harper Station in Atlanta used to make a tequila old fashioned.

Anejo tequila, grapefruit bitters, sugar, and a grapefruit peel

The following is the classic Old Fashioned. You want to drink something else, order something else.

2 oz. rye or bourbon whiskey
¼ oz. simple syrup
2 dashes Angostura bitters
Garnish: Lemon twist or orange twist
Pour rye or bourbon, syrup, and bitters into a cracked-ice-filled old-fashioned glass and stir. Add lemon or orange twist.

For my taste in this drink rye trumps bourbon, lemon trumps orange. Old Overholt, Angostura and lemon.

Want to change things up? Change the brand and type of liquor (ryes are spicier, bourbons tend sweeter), change the type of bitters, use alternate sweeteners like maple syrup, demerara syrup, honey syrup.
