new weber owner here..tips for keeping the enamel iron grate working well?

i have a buddy that gets an extra piece of fatback from the mexican market and uses that like a brush to swab the grate.
he says he's never used a wire brush ever.

grease from the fat seasons the grill and it removes the carbon apparently.

I can see it seasoning the grill but using it as scouring pad, not so much.
