So I'm having trouble cooking the inside the of pancakes, I can the outsides looking nice and pretty, but the inside always looks a little undercooked. It taste gooey and feels sticky. I'm pretty sure it is because the temp is too high because I have on medium to low heat. Is it because I'm using box mix? Or do I just suck at making pancakes?

You're lying about the heat and stop mixing the frick out of your batter. Just wet the dry mix and stir gently a few times. A nice, thick and slightly lumpy batter is what you want.

Don't flip until the bubbles forming on the surface of the pancake have popped.

This, and probably a bunch of other things too.

Thick pancakes are for losers.

I cook on med-low heat, spray the pan between each pancake, and flip when the bubbles pop.

I would not say they are award-winning, but I get no complaints.

Also, add a couple of drops of vanilla extract to your batter when mixing.

Your batter is too thick or the heats too high. If I get my griddle too hot, I just flip them twice until it cools tot he right temp.
