My wife made a roast in a dutch oven last night- we both forgot to refrigerate

It's been sitting on the stove since last night, in the dutch oven. I want to eat it but I also don't want to get sick.

Someone please convince me I shouldn't throw it out and that I will be fine if I heat it back up and go to town.

I'm distraught.

Give it the sniff test. If it's fine, crank it back up in the oven and eat.

It'll be fine, go for it. Was the dutch oven lid on? If so, even better chance that it'll be fine.

if it has been below 140 degrees for over 2 hours its in the danger zone

it's currently in the oven at 350.

I figure 30-40 min and I'll check it out. It smells fine. Delicious, actually.

Just eat a little bit and see how you feel in a few hours. If you feel fine, eat the rest. It ain't rocket science.

If it smells fine, go for it. Worst case scenario you get a little case of the bubble guts. Nothing wrong with clearing things out down there every once in a while. You'll be fine.

If you get sick from that, you likely have a compromised immune system. It's completely fine to eat.
