I would eat it. I'm surprised you couldn't find rock sugar if you found fish sauce, star anise, coriander, and cardamon. Any Asian market in your area?

Looks good but a few things:

1. No beansprouts?
2. Dice up the cilantro.
3. Use sliced eye of round

You also need a fresh squeeze glass of lemonade to go with the pho.

You need to feed a group of 8-10 to make it worth your trouble.

We have one but it is not very well stocked. There is also a significant language barrier lol. The had the anise and the fish sauce. The other spices came from kroger and walmart of all places.

I am not a big fan of beansprouts. I figured I was the only one eating so i just left them out. Same thing with the hoisin sauce. I can take it or leave it.

Agree. It was fun to do though just for a project.

Next time i probably would just to try it. I happened to have the skirt steak already cooked and i needed to use it. That part came out really really good IMO. I SV it for a long time so it was still med rare but was very tender. That part worth repeating IMO.
