I'm sure you have no clue to the economics of how to run a profitable restaurant and I would be willing to bet your actual experience with fine dining is limited to your prom night dinner, which I'm sure daddy paid for.

Dammit martini, your post got me to thinking about my prom night,, toooo long ago, and the sad truth is, I can't remember anything about that night, except where I woke up the next morning.

1979 Jack Sabins. I had the ribeye medium rare and spaghetti marinara, she had the filet medium rare. We both drank Chevis and I almost got lucky in my 1978 Cutlass Supreme. Prom was at the old Capital House Hotel downtown.
I saw her the other day and the years have been a friend as she looks better now than then. I still have the car in a barn.
Jack Sabin's dry aged their meat back then and no one knew what single malt scotch was. Joe Distafano came to the table to check on us and that was a nice touch and she may have been mildly impressed.
And BBQ in Baton Rouge was Jay's or drive to Hammond for Hi Ho. I don't think anyone around here had brisket in those days. Maybe Sonny's or Padnuhs I just don't remember.

Mine was back earlier, but, still in 70's.
I've been pondering and I "think" a group of us went to the Chateau, which was considered one of the only "fine dining" places we had to choose from. It's been a little while.
On track, I've never been to Moes in PC..

True I just see more people use Restaurant Depot for raw food. I am aware that Sysco sells to upscale restaurants. Anywhere new I go (LA.) I always get the gumbo but ask if it's made inhouse.

If it's not made inhouse I don't get it and I don't ask. There is more sources for prepared food than Sysco.
