Question, I have some "Mexican corn" but it isn't creamed. Is that ok?

Corn and jalapeño and green bell peppers, just not cream style

Eta: and it's freezing and raining its arse off up here and I really don't feel like getting out to get a can of creamed corn

Go for it. If the batter is too thick, add a little milk.

Didn't look at Otis' recipe so it might be similar. Not sure...

1 cup cornmeal
1cup milk
1/2 tsp soda
1 tsp salt
2 jalapeño peppers
1 can cream style corn
2 eggs well beaten
1 cup green onions
1/2 lb cheddar cheese
1/2 cup cooking oil

Mix all ingredients except oil and reserve half the cheese. Heat oil in skillet til hot. Pour hot oil over corn meal mixture. Stir fast to melt cheese. Pour mixture into hot skillet & top with remaining cheese. Bake at 350 for 40 minutes
