Mestizo's Cheese

Does anyone know what kind of cheese they use in most of their dishes? Its a white cheese, extremely rich and creamy. Its not your typical mexican cheese that most mexican places offer. Thanks for the help.

Haven't been to Mestizo in a while...but I'm guessing queso fresco

Well on the tacos it's white processed American cheese that is grated. Like the big blocks of velveta.

And before the purists jump in, I love it.
