Memphis BBQ Top 3

Heading to Memphis for a weekend soon. It's been a decade since I've been. I know about most of the BBQ places but I want to hit up the best ones. We will probably try at least 3 different ones. Give me your top 3 options and what you would order at each.

Just go to Gus's and get chicken.
Trust me.

Melissa Cookston owns Memphis BBQ Co.
She apparently has won tons of awards and pittmasters

I'll second the recommendation for Gus's Fried Chicken as being the best stop in Memphis..
I tried two Memphis BBQ joints last month.. Central and Neely's Interstate...
I actually preferred Interstate but neither was spectacular IMHO. The BBQ at Central was dry and overcooked. I tried their sampler and found the brisket and sausage were the only ones I'd consider good. Their sauces were top notch though. The ribs were a terrible disappointment. I'd recommend the sausage and cheese platter for an appetizer.
Interstate's BBQ flavor was good and the moisture was hard to judge as they drown the meats in sauce. If going again I'd ask for sauce on the side. The ribs were large and meaty and had just the right amount of smoke. The sides were far better than at Central.
To my surprise most locals really dislike Vergo's Rendezvous. We didnt get a chance to check them out as they were closed.

These two, plus Germantown Commissary if you're out that way.
I've never been disappointed in Central, but I have heard it's been hit or miss lately, which is unfortunate.
Also, as Ham mentioned, get some Gus's chicken.

Wasn't impressed with Central. Pink pig was good. What is the deal with the fried burger at Dyers in the 100 year old oil?

Vergo's Rendezvous
As for ribs...I really like the Memphis dry style at the Corky's Poplar location...this won't sit well with some. I love their ribs.

How long has it been since you have been there? I used to love them too, about 15 years ago. They aren't what they used to be.

I was there just last weekend, and my friend who is from Memphis told me I had to go to Corky's.
I grew up in Houston, and I thought Corky's was pretty good. Not like "OMG" but it was good.
I've heard Rendezvous is extremely overrated.
Edit: I got the Pork Nachos at Corky's as an App. and it was pretty good. The cheese was a sauce as opposed to shredded cheese, but it was a sloppy delicious mess

Rendezvous hate is nothing but people's need to chop down the tallest daisy. I've been there 3 times and had great meals all three times. Not to mention the location and building is just cool as frick. Not claiming they are the worlds greatest ribs, but they are very good and the experience is neat. Go to the Peabody at 4:30 to have a couple of drinks in the lobby and watch the ducks. Then walk over to the rendezvous for some ribs and then over to Beale St. Always makes for a good night.

Better go down before then. My mom and I did last Saturday, and it was a mob scene at like 4. People were already gathering at like 2:45 when we got back from Graceland
I recommend going to see the Ducks in the morning (Lobby was completely empty at 10 am and they come down at 11), then going to eat at wherever you want to for lunch

I'm from Memphis. I'd never tell you to go to Corky's.
Rendezvous is a cool experience. The ribs won't blow you away, but it's a cool place, great atmosphere and service. It gets way too much hate.

Haha I just went where I was told to go. My mom's contractor actually told her the same thing right before our trip (Corky's not Rend).
I went to Huey's for a burger too, and thought it was a 6.5 out of 10
