This is essential, although down here we call it "browning".

Searing (or pan searing) is a technique used in grilling , roasting ,braising , sautéing , etc. that cook s the surface of the food  (usuallymeat , poultry  or fish ) at high temperature so that a caramelize d crust forms. A similar technique, browning , is typically used to sear or brown all sides of a particular piece of meat, fish, poultry, etc. before finishing it in the oven.

Bacon Wrapped Chicken with chopped BBQ Granny Smith Apples

I can see the bacon-wrapped chicken, harkening to the cordon bleu style.. and the apples would lend a sweet flavor.. but it doesn't to me, sound very appetizing because of the texture that I'm imagining the apples to have.

But it is a very adventurous and bold effort, so I say, great job.

Bacon, by the way, won't stay wrapped and attached unless you have a toothpick fastened to skewer together. That being said, I can see this being interesting served as bite sized hors d'ouerves, sans the apples.
