Long story short, I was asked to help cook 600 lb of crawfish. I told them to order my normal seasoning, cajunland powder. I show up today with no seasoning of mine and only Louisiana Liquid seasoning to boil.

Any tips?

You are going to need a ton of salt. The liquid has no salt in it.

Go to store and get bulk salt and cayanne. That will be anywhere. Season water to taste along with the liquid. It’s fine. I do this all the time at my in-laws because that’s all they get me. Last weekend was some of the best I’ve ever done with only that. Get plenty lemons also.

Not a huge deal 3 boxes of salt will take care of the salt issue, as others have said lemon is your friend…

Edit: 600 lbs is a lot of boiling. Gonna need more beer and salt.

Lots of salt, red pepper and lemon...juice + halved lemons. I assume you’ve got a couple of big boiling rigs? Set your water up ASAP and begin to taste it until you hit the mark

Good luck.

Liquid is good as an addition but not as the primary flavor source.

Go get whatever powder you normally use.

Don't use that shite. Get bags of Louisiana powder. The concentrated liquid sucks in a boil.

So, I made it work. Thanks guys for all the tips and jokes. I used the liquid, salt, cayenne, lemons, etc. I got started and like everything, everyone is a chef. So, I got the first 8 boils going and started feeding people and let the other chefs take over and I went for the beer. Came out good but not mine.

I have an 84 quart pot and I use a big jar of the powder and 12-16 oz of the liquid. never use one without the other. Lemon and oranges.... double the lemon to the oranges. Add cayenne to taste.... easy on the salt.... most people put WAY too much extra salt in the boil.

And don't forget at least one bottle of hot sauce... maybe two.

I use 5lbs of salt for a sack of crawfish and liquid boil. You really need a bunch of stuff to make it work, but you definitely need at least a bunch of lemons, garlic powder, plus your onion and celery. I wouldn't worry about cayenne; liquid boil usually is spicy. Then again I use Zatterans, so I don't know how La is.

Salt and Lemons are your best friends right now though.
