Light, easy meals.

Couple empty nesters here. Anyone out there know of the best cookbook for these type meals. We are used to cooking big meals for family and having trouble adjusting to new lifestyle.

That's a link to Judith Jones' The Pleasures of Cooking for One, but most recipes are easily adapted to two.

Perhaps cook a side dish for a week long, already prepared dish and then supplement that with a protein of the day. Maybe a giant dish of roasted vegetables - squash, sweet potato, red potato, carrots, peppers, red and yellow onions, asparagus, garlic, cauliflower, broc, and anything else that's there with some olive oil and butter.

Then just supplement that with steak night, fajita night, smoked sausage night, salmon or tuna steak night, shrimp skewers, etc. Only dirty one pan per night and meal is cooked in less than 20 mins, or time it takes to grill and rest your meat.

We do different jarred curry sauces that we doctor up with various curry powders. We saute various vegetables like squash, zuchini , mushrooms, peppers and onions with cubed chicken breast and simmer in the sauce. Eat as is without rice. Tasty, healthy and really quick. We do this several times a week.
