Leftover steak

I have some leftover strip and ribeye I need to do something with. I normally do steak and eggs but looking for something different. I’m open to anything

I have a 5-6 ounce filet in the fridge leftover from last night. If I heat it up it will over cook, but I don't want to eat it cold.

Put it in a ziploc and put on your dashboard for a few hours in the sun. If it’s shining.

I try to undercook one if I think it might not get eaten. Like really rare, then I can heat in a black iron skillet for a couple of minutes and it still only be medium/medium well.
Otherwise cut it in some thin strips and make some nachos, fajitas, quesadillas etc.

I can’t stand to reheat steak. I slice it as thin as possible and put it on a salad. I let it sit out just a bit so it isn’t super cold.

When I have tenderloin left over and it’s not really enough to bake a potato for, I cut it into small pieces and make a quesadilla, I use 4 cheese Mexican cheese or sharp cheddar and serve with sour cream on the side, we really like it.

Yeah I like to do steak quesadillas with sautéed onion and red bells with some kinda cheese

^^^^This is the answer, I sliced some leftover strips for Fajitas a couple of weeks, they were fantastic

We always cut it into strips and pan fry and toss in a little taco seasoning and do steak tacos

Slice thin, trim fat, put on a Martin's bun with some Horsey Sauce and a slice of cheddar.

This is what the wife and I do with leftover steak. I only cook my steaks to medium rare at most and if any is left after we eat them they get used for the above. Makes for a quick meal and good use of leftover steak.

Diced into small bite size pieces . Re-heat via Sous vide so meat won’t dry out , make street tacos

Raw or cooked?
Cooked, I just slice it very thin, heat some butter on med-high heat in a frying pan, throw in the steak and keep tossing it in the butter just enough to warm through...like less than a minute is enough. Warming through shouldn't take it above the 120-130 you originally cooked it to.
