Morning Everyone,

For Easter, we cooked some french fries in duck fat (very freaking good!).

I thought the stuff would be much more darker and murkier, but it was very clear - looked pretty much like cooking oil after it was used.

Any suggestions for using it to cook something else with? 'Preciate it!

another potato dish, but you can confit some potatoes. wash them well, slice in 1/2" rounds, cover in fat, put in the oven til they are done. 350f is fine.

to serve them crisp them up in a pan to get some color.

Cube red potatoes and boil in salt water until soft.

Place in skillet covered in duck fat and fry for.10-15 minutes

Whole Foods has it, and sometimes St. James Cheese has it as well.
