Left over Turkey ideas

I took tulane’s advice a purchased a 22 lb bird for about $7. Plans changed bc the in-laws kitchen remodel isn’t done. So thanksgiving dinner is at my place now. Think 6 are coming. Doubt we can all eat 3 lbs of Turkey each.

Thinking gumbo and pot pie. Any off the wall suggestions?

Turkey broccoli cheese mushroom pasta/rice casserole is always good. Not really off the wall though. I wanna try thanksgiving leftover egg rolls this year

Turkey tetrazzini is our old standby when no one wants the trouble of making gumbo.
Turkey salad (like chicken salad) is good for the leftover thigh and leg meat.
A big pot of turkey vegetable soup is cleansing after a few days of feasting.
Hot turkey melt sandwiches, open face, with chutney and good cheddar.
Or kick it old school and make a turkey loaf, aka turkey cheese. Think hogshead cheese, only made with shredded leftover turkey, seasonings, stock, and gelatin. Eat it cold with crackers, or melt a slice atop a bowl of hot buttered grits.

Take leftovers to a soup kitchen. Or better still, make a big-big pot of soup and take that to them. Give them a day or two warning you plan to do that. Turkey, broth, carrots potatoes, celery, onions. I'm not all that good with seasoning, but you probably are. I have been hungry before, they will appreciate it.

I’m guessing it’s frozen for that price and if so better have it in the icebox thawing now.

And I’m just a white bread, turkey, blue plate, dressing, cranberry sauce can slices, salt and pepper sandwich leftover guy.

With a bag of Zap’s and a big glass of ice cold whole milk. Then a long nap.

Turkey noodle soup is the answer here. Debone the turkey. Boil the turkey carcass in water for an hour or so to get a gallon of stock. Add the turkey meat, carrots, celery, onion, sage, thyme, and salt to the stock and simmer until carrots are cooked. Add egg noodles and cook then until done.

Turkey noodle soup is the best part of Thanksgiving. We can’t wait for this leftover meal.

Pretty much what I do with it. My wife loves my turkey pot pie and she also likes me to make turkey salad (much like tuna or chicken salad) and core a tomato to stuff it with the turkey for a light lunch at work.

Turkey sandwich is how I always go.

But you can do turkey salad or turkey soup. Make your chicken fajita soup but sub turkey for it. Mmmm

If you want to be super fancy, use the bones and turkey parts to make the stock.

Sometimes my mom will take the leftover turkey, dressing, and gravy mix it all together and then add mushrooms and top it with Swiss cheese and bake in the oven to reheat like a casserole.
