Fried foods date back to ancient cultures in Europe, Asia, and even North America. In medieval times, fried chicken was already being eaten in western Europe. Scottish immigrants to the United States are often credited with being the ones to introduce fried chicken to the country where as most other European immigrants to the country ate baked chicken.

When African slaves who worked as cooks were brought to the country, they put their own spin on the dish using seasonings and spices not found in most Scottish dishes.

Most slaves weren’t able to raise more expensive meats, and were allowed to have chickens, so frying chickens became a common occurrence on special occasions throughout black communities in the south, thus Southern fried chicken evolved.

What's your favorite fried chicken? What techniques do you use to make the best and crispiest?

Popeye's. Though lately I have heard people talk very highly of Frenchy's. They have more interesting sides to me. The one time I went they were out of collard greens - bummer. The lady said she had worked there for close to two years and it was only the second time they had run out. So it was just a case of very bad luck. The one closest to my house doesn't have a drive through either so it may be later in the year before I go back.

Drive-thru, I think it is quicker than going inside. I get to stay in an air conditioned truck and have a cocktail all while getting my spicy/crispy Popeye's chicken.

If your travels ever take you on 190 East through Opelousas, Mama's Fried Chicken is the cripiest, crunchiest fried chicken served out of a brown paper bag.

The Market Street Cafe' at the California Hotel & Casino in downtown Las Vegas consistently has the best chicken I've tasted...to include beating out a couple of places already mentioned in this thread.

Sad day for the South, but I'll take it.

In NOLA on Claiborne Ave. Right in the strip mall across from Tulane's baseball stadium.
