This will be the name of the restaurant in the new Ace Hotel in Nola. Chefs Michael Hudman and Andy Ticer from Memphis are opening the new spot. The former chef de cuisine from Domenica will be the executive chef. What does everybody think about this new spot? The food will be a cross between the American south and Italian roots just like their other concepts in Memphis.

Opens March 14 but I used to work for them for 5 years and was CDC of one of their restaurants. I know the NOLA food scene pretty well and was curious what everyone thinks about them coming from Memphis to Nola.

I started an organic vegetable farm with my father. We had been doing it part time for five years while I was cooking and decided it was time to leave the kitchen temporarily to grow the business. We grow all kinds of cool veggies and grains. Run a stone mill and have a line of old school stone ground grits and corn meal. We also grow other rare grains for fresh flours. I am also in the beginning stages of opening my own restaurant that will be directly correlated with the farm.

Those guys are for real though. I was just curious as to how the locals were reacting to outsiders coming in and opening a new spot in such a trendy upscale hotel like Ace.

They should've named their daughters Willa and Jean, cuz that's a better name.

I love the Ace in Manhattan. Cool hotel that has fantastic f&b. Andy and Michael are tremendous cooks and have no doubt this spot will do well, save for fact that at some point restaurant growth in New Orleans is going to come to a halt.

I know the Memphis food scene very well. My wife is from Jackson and we go to the Delta often. We can't wait.

The farm is located about 45 minutes north of Memphis in northeast arkansas. Its been land my family has owned since the thirties.

We do not raise any protein. Chickens and bees are in our future but that will have to wait until next year. We will source our protein for the restaurant from a farm ten miles way that have chickens, goats, pigs and cattle.

Nice. Lot of cotton and beans in that area. We have bees and will have chickens shortly.
