Added this to a nice braised chuck roast last and a little pork tasso, talk about make the gravy have an excellent, velvety mouthfeel. I mixed half and half with homemade beef stock and it may have been the best rice and gravy I ever cooked.

If you are ever there, they have it both fresh and frozen. This is my new secret weapon.

Outstanding ingredient if you get some.

I buy his chicken feet all the time and make a great gelatinous stock.

Brine one of his chickens and then roast it and you will not buy another commercial chicken.

Step ahead of you. I don’t buy my meat anywhere else in town. Too close and it’s all quality.

Could use a bit heavier smoke on the sausage and Tasso but that’s picky.

I hope he does well. It can be a bit hard getting in and out but he does have some great stuff.

I stopped in one day to pick up some steaks and they sold me on the pork chops, said that's what they are known for and to cook them just like I would cook my steak. Hands down the best pork chops that has come off my grill.

I will have to look for the broth next time I stop by.
