I take it out of the casing and brown it up like ground beef, then add it to my sauce.

Me too. Sometimes I'll brown the links in olive oil and then cut the links into slices and cook them the rest of the way in the sauce. Easier to eat.

For the meatsauce I use about 1/4 lb. Italian sausage to a pound of chuck....just can't beat the flavor of the sausage.

Absolutely!!! I ALWAYS put ground italian sausage in my spaghetti. I must say, I am def a spaghetti connoisseur. It's my favorite food EVER EVER and I eat it at least 3 times a week! Sometimes, I'll only use the sausage, but mixing it with lean ground sirloin is the best! Use a good cabernet to simmer with the meat and trinity. Also, try a little brown gravy mix in the sauce (not alot). I have not been too impressed with some of the store brand ground italian sausage, so if you want good stuff, you'll have to find brand name! I hope that helps! Happy spaghetti eating!

A lot of people do, but I personally don't like Italian Sausage at all. I think it has a "minty" taste.. I know, I sound completely stupid saying that but that's how it tastes to me. I just hate it.

It's from the fennel seed.



Coincidentally fennel is used to flavor some toothpastes.

Ah. Glad to know I'm not crazy for thinking that. I have tried and tried, but just can't get into Italian Sausage.

That being said, my pickyness goes away when I'm really hungry and I've eaten it plenty of times.

I used a pound of Eyetalian with 5 pounds of beef last night.Turned out fine.
