His schtick died long before he did.

He did this dish that "every Cajun loves" and it was a mix of rice and canned pineapple, it looked gross and I never saw it at any Cajun dinner.

I enjoyed watching his show when I was a kid.

Picked up one of his books in a store in Natchitoches recently. The recipes sounded simplistic and, often, terrible.

They also lacked detail. They would say things like "fry in hot grease" with no hint of temp or time. Maybe folks back then just knew those things. Or maybe it wasn't a serious cookbook; just a souvenir to sell to TV fans.

Not at all. I watched Justin on TV. He was entertaining but I seldom followed any of his recipes. Now, if you wanta talk 'hate' I could not stomach Paula Dean. Watching her gave me gas so I had to turn her off.

I got a bottle of Angostura Bitters when Vincent Price recommended it. VP was a great cook. I never use Angostura in cooking but I love taking the lid off and sniffing it. Best smell in the world.

A fair number of them turn up in used bookstores, library book sales, and most public libraries have copies. Have paged through many, never felt the need to buy (or even check out) his books. They're interesting as artifacts from a particular cooking era, but styles/tastes change.

Idk why they gave you a thumbs down.

I loved him as a child, but he couldn't cook worth a damn. All of his recipes turn out some very mediocre cajun dishes.

As for Alton Brown, he is the best TV chef. He has about 10 episodes of good eats where he makes zero damned sense (the crawfish episode comes to mind) but by and large he at lwast points you in the right direction.

Justin Wilson reminded me of my great grandpa. He wasn't a fantastic cook by any means but did some meals pretty well (crawfish stew comes to mind). He was entertaining if nothing else. How the hell do you think John Folse became famous? He has a PhD in bullshite.

I watched him growing up every Saturday afternoon. Bill dance was on after that.

My mom worked with JW's daughter and I think she said he was from the Kentwood area but I'm not certain.

Did you ever see Bill Dance 'Take outs' on the internet? My favorite is when he caught his lure in a tree and while pulling it a snake dropped on his head. The cussing was not bleeped out.
