And now I'm craving gumbo. I was trying to hold off until college football next week.

OP ... you can sprinkle file' to your bowl of gumbo which will add flavor and thicken it

as others have mentioned, reduce the oil, and cook gumbo longer ; slow and low for several hours

It's always gumbo time!

Someone just brought me some shrimp heads. May make shrimp gumbo if I have enough for a good stock.
