Anyone got a good recipe besides the old butter and lemon standby? I want something new. My other standard that I am trying to avoid is baking in the oven topped with bread crumbs (which is delicious, i'm just tired of the same thing over and over).

I did this - skip to 10:00 with snapper and it was fantastic. I say that as a lifelong tomato hater. Something about cooking them down like that removes the foul taste. If it's good with sheepshead and snapper, I would think it would be ok for dolphin and wahoo.

Blacken mahi. Make a sauce from siracha, greek yogurt, cumin and lime juice. Make a pico I guess I would call it? I use tomato, jalepeno, red onion, a little diced up mango, lime juice and salt. I make mine in a strainer and leave over a bowl. Add cilantro, lettuce or what ever fresh herbs you like and eat on a tortilla. Never had it with a hard shell but I imagine it would work.

I made this last week using coconut oil instead of butter, adding lime zest and shredded toasted coconut to the nut mixture, and soaking the mahi in the coconut milk-all suggestions in the reviews. It was delicious.

For Mahi - make up some lime/cayenne butter, coat the filet. Grill it and baste with the butter along the way. Top with a salsa with red bell pepper, onion, cilantro, lime, jalepeno and pineapple.

Same thing for the wahoo. good with reds also. salsa is also good with corn instead of pineapple.

Coat liberally with your favorite blackening seasoning and cook in a HOT skillet. Melt some butter and brush on before, during, and after. I do my tuna steaks like this and just ate some Mako done the same and it was delicious.

Make a ceviche with the Mahi.

Be careful with cooking the Ono. It's really easy to dry it out. Hot and fast like you would Mahi.

nope, born and raised here. Been to Texas twice in my life, not counting in and out in one day business trips. it's good. Try it or not, I don't care.
