How Would You Handle this Crawfish/Shrimp Boil Situation? Update Pg2

My office has resolved to do a crawfish boil, but a few people want shrimp instead. As the only one from Louisiana, they just assumed I would take care of everything.

However, their plans make this a bit tricky, and they bought the supplies without asking my input.

Things they want to boil:
-15lbs of Crawfish
-5lbs shrimp (headless...facepalm)
-Potatoes
-Sausage
-Frozen corn

All done in LA Fish Fry bagged boil.

They want to do this in one pot, and I've never done shrimp and crawfish at the same time.

Can this work well in one pot? If so, recommended order/times would be appreciated.

Well? I don't know. Probably. Shrimp just go last after the water is well seasoned. Potatoes first, then crawfish/sausage, frozen corn in during the crawfish soak, then shrimp last.

how many people?

anyway I would recommend boiling your crawfish and veggies just as you always do, then double up on the seasoning bring water back to a boil turn off and put shrimp in until they drop

At first they ordered peeled shrimp

I caught it on an email during vacation and advised them to get unadulterated shrimp.

you could boil the 5lbs of shrimp in a saucepan on the stove. just cook those seperately and deal with the crawfish

what i would do if i were you is toss the shrimp in the freezer, go get a real sack of crawfish, and show them how its done

If it has to be done using these ingredients, then 1. Shrimp first (least seasoning used in the water); 2. Potatoes, then add 3. Crawfish, then add 4. Corn into the second boil (in that order b/c of cooking time differences); and last 5. Sausage (because the grease from the sausage will get into anything else boiled in that water).

Total of three boils, although there's no way that's enough food if there's more than 4 or 5 of you. Better get some citrus, garlic, salt, and cayenne to round out the seasoning too, or it's all not going to taste very good.

Places break open sacks all the time, especially if they're high volume. Tony's in Baton Rouge does it, as does Castnet in New Orleans. I buy them by the pound all the time here in Atlanta.

As such, I've boiled 15 pound boils many times. It can be done easily with the right pot, but I fear the OP doesn't have gear handy and might be doing this on a kitchen stove.

I also wonder how many people are trying to be fed. The 15 pound boils I often do are for the Wife and I and our two boys. Personally, I think it's pretty shifty of them to just order stuff and tell you to cook it.

The shrimp can be done in the same pot at the same time as the crawfish too, since the crawfish cook will be quick for that small of a batch. Ideally, you'd want them separate but since they're already half-steppin' with the headless shrimp might as well.

My thoughts, too.

We are in Arky and have to order online, so I guess that's where the issue with the 15lbs came from. 6 person office.

Funny, they bought around 3lbs of sausage. Some people are going to have to eat sausage and potatoes.

Doing it on a propane normal boiling stove outside.

You need to do them a favor. Call the fricking place they ordered from and change it to a full sack.

15/5 isn't a crawfish boil. It's a fix for one person to cook by themselves in their own kitchen Because crawfish have been out of season for so long and they can't wait any longer.

I agree with others about getting a full sack especially if the office is paying for it. Take leftover crawfish home and make a killer etouffee.

As for the shrimp, just add the shrimp as soon as you cut the fire on the boil. Did this recently and they were perfect.
