Never had to skim. If seafood, no excess oil. If it is chicken/turkey and sausage, I cook my sausage and drain on paper towels, even pat it dry. I normally make stock ahead of time and put it in fridge and skim any oil off the top of the stock. Once everything is merged, no excess oil

my grandma put paper towels on the top as the gumbo cooled and kept adding them as they got filled up. I will keep doing that tried and true method.

I just keep a small bowl by the pot to drain it into. It is kind of a pain to clean, but I think it does a great job of skimming the grease.
