I usually eat it in the bowl by itself, maybe with some shredded cheese, onion, and a dollop of sour cream on top.

But for a real treat -- and don't knock it til you try it -- eat it with some saltines topped with softened cream cheese. It's awesome.

Topped with cheddar cheese and green onions. If I have Fritos, I'll put it on top of the Fritos. If I have saltines, I'll scoop up the chili with saltines.
I recently had the urge to put a dollop of sambal oelek on top of the cheese and onions. That was a nice change of pace. Significantly kicked up the heat factor.

Fresh cilantro and crumbled cotija on top with small quesadilla wedges (corn tortilla) on the side.

Over rice with red onion and cheddar is my go to.

I'll put it over fritos or with a dollop of sour cream to mix it up.

I've never seen it "over rice", like say, etouffee or red beans and rice. But I have seen rice added similarly to how you would add rice to gumbo.

I had never heard of rice in chili until I started at LSU. The Union Cafeteria ladies would ask if you wanted rice in it. I tried it and it was pretty good.

But to answer the OP's question, I eat my chili (with beans) with crushed saltines or oyster crackers. I find it hypocritical that purists say "NO BEANS IN CHILI!", but then add cheese, sour cream, onions, etc.

This is what I meant by over rice. My west Texas wife thinks it's an abomination, but I tell her it's a cheap filler that makes it last longer.

With white bread. I do what my Dad always did- put 1 slice of white bread in the bottom of the bowl, ladle the chili over the top. Eat the chili and eat the chili soggy bread at the end of the bowl. I like cornbread too but I normally do the white bread thing.

Fritos are great at the bottom but I never seem to have them. I use saltines as well. Cheese and beans are a must for me.
