How do you bread your chicken and shrimp?

Just experimenting next weekend and wanted the "experts" advice. I was going to use the deep fryer for first time in a few months.

Please do not add a ton of ingredients just something simple for a novice, please.

For shrimp I let them sit in ice water and get cold-cold. Then I shake a little water off and put them straight into Zatarain's Seasoned Shrimp-Fry then straight into some 375 degree oil until they float.

Water and shrimp-fry. How is that for not "a ton of ingredients?"

That works for me. Thank you for that. I hope they sell Zatarin's here in Arkansas.

shrimp=white flour, egg wash, yellow flour. not corn meal or anything grainy. straight yellow flour.

I don't like heavily battered fried chicken. Seasoned flour only. Crispy and light.

for shrimp, i do very much the same i do for friend green tomatoes

salt and pepper shrimp
coat in flour (i add old bay, red pepper, and garlic in with the flour)
drop into egg/coconut milk mixture, soaking the shrimp for a few minutes
cover in unseasoned japanease panko
deep fry those mother frickers

NO to corn meal. Flour only!
