I've always preferred skillet/griddle cooked dogs to grilled.

agreed. I boiled them before i lived around NYC, but after tasting the greatness of griddle cooked dogs, i never do them any other way. If i am grilling other stuff and have a large crowd/tailgate i'll toss on some dogs to save time and money....but i never set out just to grill hot dogs. If they are just for me, it's griddle/dry cast iron skillet cooked all the way.

the griddle gives the good snap, which is THE key.

and yes, they sell boar's head down here. never noticed it until i moved back.

Calandro's has them and on occasion I've seen them in Albertson's. Not too often though and not lately.

I also like Chisesi ham if you can find it in BR.

However I mostly boil them since that is pretty much the southern way or at least the way I've had them most of my life.

i grew up eating them boiled or grilled. i have subsequently learned, however, that they taste a heck of a lot better browned in a skillet than boiled.

Is your recipe similar to the canned Wolf/Austex/Castleberry "hot dog sauce" available in grocery stores everywhere (next to the canned chilis)?

I like the canned Wolf brand - low in calories & fat with a little fiber (thus low in Weight Watchers points).

right....boiled ones are pretty nasty in comparison, and that's how my mama made them.

I'll take a beer brat over any dog any day of the week. Those brats are just amazing.

brats are pretty darn good; i had never eaten them before moving to the midwest. a friend from wisconsin introduced me to them. boil them in beer for a few minutes and then finish them on the grill; cover with onions and peppers. awesome.

I don't know. I just googled "hot dog sauce recipe" and it came up. I've never made it, but it sounded like the stuff they have in New York that El Tigre was referring to.

John Kerry got rich on your idea as well. Bet he wouldn't eat a hot dog with a 10 foot pole.

Oh, they soon forget...As many talks as we have had and you make that kind of generalization...shame on you, el tigre...I have had dogs for the east coast, west coast, chicago...I have lived from SoCal to NC....I have been all over the map....

i know you have lived all over. My point is that aruguably the originators of hot dogs have it wrong, but we have it right? I would say the same thing about gumbo served in NYC, they would probably not do it right.....and they don't, it's horrible.

Maybe...but mustard is universal, and I consider that to be the hot dog standard.

You are correct...the gumbo I had in Barstow, Cali is still the worst gumbo I have ever attempted to eat

Strangely enough, the best cajun food I have had was in Alabama. It was owned by a Louisiana couple who owned a restraunt outside of Oxford, Al...great food.

I didn't get to check responses until now, I never thought what I said was so confusing to everyone. My family and everyone I know in south Louisiana calls "hot dog sauce" the chili that you put on hot dogs. Are we the only people that call it this. So to start again do any of you have a homemade recipe for "hot dog chili". Sorry to confuse everyone.
