Homemade Cayenne Hot Sauce

I made a batch of jalepeno sauce recently from my home grown jalepenos, and the cayenne peppers are now in full red. It got me thinking of making a Tabasco style hot sauce at home. Searching the Internet there are a lot of recipes, and most involve fermenting the peppers a few weeks. Does anyone have any experience with making their own hot sauce, or have a good recipe they use? Thanks for any advice.

I make pepper vinegar...stuff the de-stemmed peppers into a clean glass bottle, top off with vinegar, and put in a cool, dark place for a month or so.

ive got a few jars that i did about 3 months ago. not gonna type out the whole recipe but it came down to putting the peppers and some vinegar into the food processor and mixing til its all liquid. boiled the jars to seal and left them on the shelf.

i was actually planning on opening up one tonight when i got home. ill send an update post tonight or tomorrow

Turn all the exhaust fans in the house on high, wear rubber gloves and a gas mask. It's on the same level as a full blown meth lab.

Do all of that after you have sent the ol' lady and the kids to grandma's for the weekend.

I make some last summer. Gave most of it away as Christmas gifts. Also made some cayenne dust by taking the dried peppers into a food processor then smoking that, then into a coffee grinder. Good stuff

this was posted here months ago. excellent sauce. I have since add a few dried chilis and darkened it up. Most excelllent. Pasted just as it was written on TD F&DB. the poster should claim this.

Tabasco type hot sauce
I pick my peppers throughout the week and keep them in a jar full of vinegar. This year i have ghosts, habaneros, cayenne, tabascos, and new this year (super chilis). I tweak my recipe here and there depending on the taste i am going for and what i have on hand. This time i used mostly ghost peppers bc they are growing like wildfire, but I used a few of each of the others as well. I start by dumping all of my peppers (cut off stems before obviously) in a dutch oven.

40 peppers (assorted)
Cover with vinegar (white or cider)
6 gloves of garlic
Boil 15 minutes with lid on
Transfer to blender and puree until smooth
Squeeze in whole lemon
Add salt to taste
Keep blending and adding salt till it tastes right
Poor into an old whiskey bottle
Refrigerate until cold
Enjoy

Sounds good McKinney. Ill probably boil the mixture outside. The last time even the dog looked at me like due to strong smell
