The trick to that yeast is a low mash, high pitching rates, and hot temperatures after a couple days of primary. You don't want to start it at 80 right out of the gate, but you definitely want to get it there once the gravity has dropped significantly but before yeast activity dies down too much. You can always finish it off with 3711 if you Belgian strain craps out around 1.020 or so.

I made an order yesterday for this year's blueberry beer, but rather than using a wheat I'm going to use a cream ale as the base. I have a few gallons of blueberries in the freezer that I will rack onto, and I plan to add a couple tablespoons of vanilla to the secondary also.

1 smack pack 1.055 wort(I thought the somewhat low pitching rate would throw some nice off flavors)

Interestingly enough. Spent the night in a bucket outside in Jackson the night it was 45F outside. Then spent the day in my truck and on the ride home around 60-70. Then got it inside at around 72-75 now since Sunday night. Was going a little Sunday night and solidly Monday Morning.

Yeah that sounds pretty freaking tasty. Never heard of liquid vanilla in a finished beer though?

i have a pecan porter in secondary. gonna bottle next week. and i just kegged a lemon weiss. I have my dad harvesting his blackberry crop this year. going to see how many he gets before i make a batch.

I saw that. However, i'm trying to curb my spending on frivolous things at the moment. Well, i don't consider it frivolous, but the fiancee' might.

Question for the homebrewers: Why do you think it is that we only have (to my knowledge) 1 or 2 brewpubs in NOLA (or Louisiana, for that matter)? Do you think it's just a matter of startup costs, or a general lack of a traditional "beer culture"? I was leaning towards the latter as it seems like places like Milwaukee and Denver seem to have plenty.
