Brewed my very first saison last night. Here's the recipe:

10 lbs Belgian pilsner
1.5 lbs flaked corn
1 lb wheat
1/2 lb Munich
1/2 lb flaked wheat
4 oz acid malt

1/2 oz Magnum 60 minutes
1/2 oz Centennial 20 minutes
1/2 oz Centennial 5 minutes

Wyeast 3711 French Saison starter pitched around midnight and was fermenting away at 7AM.

Will dry hop with an ounce of Amarillo after primary fermentation finishes up.

And I know, no Brett, no care for Bottomland and rds

Hey now, I have two sacch saisons going at the moment. Hopefully they stay that way. Never know with how much brett is floating around my house. Let me know how those American hops work out.

You do know i could have given you my extra pack of 3711 for free.

BTW, anyone in the BR area want a free pack of Wyeast 3711 i received in February/March?

It was a pretty decent BYO. Much better than others. Some really good info in there, especially on the solera technique.

There are maybe 4 or 5 article in that entire issue that related to me. I have no desire to ever brew sours. I wish i did, and i wish i like them, because they present a new challenge and multitude of styles to brew, but i just don't have the taste for sours.

Totally forgot you had that.

I also hit my all-Nelson Sauvin IPA with 4 ounces of dry hops. Took a taste and it was pretty damn good before the dry hops. It had an almost white wine aroma, which is exactly what it should have had. I'm wondering if this might be an IPA my wife actually likes. I'll find out in a week.

ran across an interesting item on craig's list...

It's listed as a keg, but looks like a firkin to me.

Either way it's a really good deal at $35, if you know someone in Long Beach MS who could pick it up.

If I set up a Big Brew Day for National Homebrew Day on May 3rd at 40 Arpent, would anyone from the board attend? Especially those in NOLA? You would be welcome to bring your system and brew or just hang out.

Just a heads up on the WYES special events permit.

I received our club's permit today in the mail. The NOLA Dept of Revenue waived the $50 license charge.

I would love to, but i'm busy building on my deck.. I need the next few weekends to complete it. If I finish early (meaning next weekend) then possibly.

Correct, I sent in a special event application, an exemption application, and sent those in with a copy of our state non-profit documents.

I'll forward you the applications we completed. They are MUCH shorter than that asinine thing WYES emailed to everyone.

I saw one application for the vendor permit that was like half a page. That the one you're talking about?

yeah, that's the one (half page) we completed.

There are two applications. The one I received from WYES was titled "Schedule A Occupational License", it's like 4 pages long and asks all sorts of stupid questions.

The one from the city was titled "Central Registration Application - Special Events" and is like half a page.

Hopefully revenue can issue me a permit at city hall next week. The April 28 deadline kind of jumped out of nowhere for me.

I couldn't attend, but I'm sure a couple of Swamp Rat guys would be down.
